It’s the right salad to serve in a giant bowl and share with household or pals. The nourishing brown rice and edamame present a supply of advanced carbohydrates and protein to maintain you energised and glad, while crunchy crimson apples add sweetness and freshness.

Serves: 3 as a predominant, or 4 as a aspect
Components
2 cups cooked brown rice
2 spring onions, inexperienced & white part finely chopped
1 cucumber, diced
1 capsicum, diced
⅛ purple cabbage, shredded & chopped, 2 cups chopped
¾ cup frozen edamame, ready as per packed directions
½ crimson apple, finely diced
1/3 cup peanuts
For the dressing
¼ cup easy peanut butter
1 tbsp tamari
2 tsp sesame oil
1 garlic clove, crushed
1 tbsp maple syrup
½ lemon, juiced
1 tsp chilli flakes
½ tsp grated ginger, non-obligatory
Methodology
To make the salad, mix all the components in a big mixing bowl. Toss to mix.
To make the dressing, whisk collectively the components in a small bowl. Pour the dressing over the salad, combine and serve. Take pleasure in!
